Piffle, make your own! $150 in materials and two weeks of part time effort and you can have a great boat. Check Tom Yost's wbsite for lots of free designs and complete building instructions. I heartily recommend the Sea Rider (much more stable than you might think). http://yostwerks.com/WoodSOFMain.html

Can you spell anthropomorphic? Well, neither can the Inuits but that's how they size their kayaks. Your body parts determine the dimensions of your boat. Their system has a lot of variability and there should be a way to get a boat that will accept your big puppies.
The Inuit method is explained in "Building Skin on Frame Boats" by Robert Morris.

Sure! Build to suit, as mentioned (I raised the front end of the cockpit on that one), or build one of Tom's many larger designs. All his aluminum framed folding kayak designs can also be built - cheaper, lighter and quicker - as non folding wooden framed boats.

Really, this is the quickest and cheapest way to build a great boat!
